Observation (CORRECTED DURING INSPECTION): Bleach surface sanitizer in bucket at 50 ppm. Required concentration of bleach for sanitizing is 100 ppm. Mixed new solution. Always follow this recipe: 1/2 teaspoon bleach per 1 L of water for 100 ppm. Use this for sanitizing dishware as well (e.g. cutting boards, tongs, knives, bowls)

General sanitation is satisfactory. Some cleaning is required in hard-to-reach places (dust/fallen beans) - e.g. behind coolers/freezers, back of shelving units
No signs of pests observed. Discussed closure of door / installation of screen door to prevent entry
All coolers operating at </=4 C
Freezers operating at </= -18C
Thermometers inside cooler/freezer units
Foods stored at least 6" off the ground, mostly covered to protect from contamination *seal rice bag
2-compartment sink used for warewashing. Not in-use during inspection. Discussed requirement to use bleach for sanitizing. Sign is posted at sinks.
