Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces. Premise cleaning is to be conducted on a daily basis to maintain premise sanitation. Violation Score: 3

Reviewed food cooling process with shift supervisor. After cooking, fruit mixes are portioned in small metal containers and placed in an ice bath. Staff following a 10 minute timer, will mix and check temperature of product to verify product reaches 20 C prior to placing within walk-in cooler. Use of toothpaste to clean food equipment discontinued. Used single-use containers no longer stockpiled for later use.
