Observation (CORRECTED DURING INSPECTION): Floor corners under equipment in (boh) kitchen and front service area have build-up of debris.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Premise cleaning is to be conducted on a daily basis to maintain premise sanitation.

Comments

Reviewed food cooling process with shift supervisor. After cooking, fruit mixes are portioned in small metal containers and placed in an ice bath. Staff following a 10 minute timer, will mix and check temperature of product to verify product reaches 20 C prior to placing within walk-in cooler.

Use of toothpaste to clean food equipment discontinued.

Used single-use containers no longer stockpiled for later use.
