Comments

Ventless portable deep fryer by the back exit door area is a cause for concern as this premise is primarily a meat shop. There is no additional prep table or hand sink in close proximity to ready to eat food handling area. A hot holding unit stored on top of the raw meat display cooler. Cross-contamination issues arising from handling raw and ready to eat products must be addressed. Will revisit this issue after discussion with management.
Clean the deep fryer unit after use. Do not leave it soiled overnight.

All handsinks fully stocked.
Chlorine bleach solution 100 ppm provided at all food handling areas.
Remove clutter (plastic bins, take out containers and misc items) stored on the bottom of the stairway. Correct today. If the items belong to the operator upstairs, they must be moved upstairs.
Ensure that meat cutting and grinding equipment used throughout the day are cleaned and sanitized at least every 4 hours.
