A follow-up inspection was conducted, the following observations were made:
- Cooling procedures have been developed but still not meeting the requirements. Food temperatures are being tested and recorded hourly, but temperatures are not dropping fast enough. Ensure to meet the cooling procedures of cooling food to 20C within 2 hours, and then placing in the fridge and cooling down to 4C within 4 hours. Continue to put foods in smaller, shallow pans and purchase cooling wands or paddles to help cool foods. Investing in an ice making machine will allow an ice-water bath to cool foods down quickly. Options will be explored to meet the cooling requirements.
- All plastic, protective coating has been removed; all raw wood shelves have been painted; the coving in the Kimchi area has been repaired and sealed; the drain pipe for the 3-comp sink in the Deli area has been repaired and it no longer leaks; and damaged equipment and utensils have been replaced.
- Sanitizer spray bottles are labeled; chemicals relocated out of the food storage area; and the cement floors are in the process of being resealed.
- Ensure all cement floors are sealed by their correction date (February 2018).
- Potato peeling machine was cleaned.
