Observation: Line cooler and tall cooler in kitchen were around 8C. All coolers that hold potentially hazardous foods must be maintained at 4C or less. Temperature logs available but were not consistently maintained.
Corrective Action(s): Coolers adjusted during inspection and food from line cooler moved to alternate cooler less than 4C. Ensure these are monitored daily and adjusted when needed to maintain 4C. If tall cooler in kitchen does not cool down to less than 4C within an hour then move all food to cooler in back until it is adjusted/repaired.

√ Low temperature dishwasher at or just above 50ppm chlorine
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is good
√ No signs of pest infestation noted
