Observation (CORRECTED DURING INSPECTION): Dry wiping cloths noted at cooking station. Sanitizer bucket noted with 200 ppm chlorine detected.
Corrective Action(s): Ensure all wiping cloths are kept in sanitizer solution of 100 ppm chlorine when not in use. Do not let wiping cloths stay on the counter to dry out and allow for microbic growth.

Observation: 1.Glass light bulb noted in walk in cooler - no protective cover noted
2. Plastic Rubbermaid container noted with duct tape
3. Strainer noted with broken bits missing.
Corrective Action(s): 1.Ensure light bulb is covered by protective cover or replaced with LED plastic bulb. Must protect food from potential glass hazard.
2./3. Replace/remove all damaged food containers and equipment to prevent possible contamination of damaged plastic or metal bits.

Observation: Excess boxes in hallway closet to the roof, clutter in side freezer room, plastic bags stored beside dishwasher held back by cutting board.
Corrective Action(s): Ensure the above areas are organized and clutter free to prevent possible hiding places for pests and allow for easier cleaning and pest monitoring. Improvements have been made since past inspections. More work to be done.

Manual dishwashing with high heat sanitizing dishwasher noted at 73 C
No signs of pest activity at the time of the inspection - pest control provided by Action PC. Onsite monthly. Back screen door in use and appears satisfactory.
General sanitation has improved since previous inspections. Continued attention needed to ensure excess paper goods (cardboard boxes) and recyclable containers do not accumulate.
*Wooden table in kitchen is showing signs of wear. Although this table is not used as a direct food contact surface (ie. cutting boards used on top), it must still be in good repair. Discussed repair/replacement of table with Operator in future.
