Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottle measured at >> 200 ppm chlorine concentration with test strip. Staff diluted sanitizer during inspection which measured at 200 ppm chlorine concentration.
Corrective Action(s): Prepare bleach sanitizer at a concentration of 100-200 ppm chlorine concentration by mixing 1/2 to 1 teaspoon of bleach with 1L of water. Obtain chlorine test strips and verify sanitizer strength daily (or as per approved sanitation plan).

Observation (CORRECTED DURING INSPECTION): Raw meat in two containers observed stored on top shelves in the walk-in cooler, above and beside ready-to-eat foods. Staff moved the containers of raw meat to the bottom shelves during inspection.
Corrective Action(s): Do not store raw meat beside or on top of ready-to-eat foods to prevent potential contamination of food. All raw meat should be stored in designated separate sections of the coolers, preferably on bottom shelves (or as per approved food safety plan).

304 - Premises not free of pests [s. 26(a)]
Observation: Ten to twenty drain/fruit flies observed in kitchen, specifically in dishwashing and dry storage area. Sticky fly traps are observed in place throughout the kitchen in non-food preparation areas. Professional pest control company is contracted, however, pest reports are not available for review on site.
Corrective Action(s): Monitor fly population. Change fly traps frequently. Contact pest control company to assess where the flies are breeding/harbouring and to apply treatment to the affected area(s) (e.g. drains or pipes) as necessary. Keep all food covered to prevent potential contamination from flies. Submit the last two months pest reports to the health inspector for review. Continue to submit future pest reports to the health inspector until the next routine inspection.

Observation: General sanitation is unsatisfactory in the following areas, found with grease and/or food debris:
- All floors between major pieces of equipment
- All cooler and freezer handles
- Floors behind the dough machine
Corrective Action(s): Degrease, clean and sanitize all aforementioned areas to remove grease and food debris. Conduct regular cleaning of the facility, including but not limited to hard to reach areas (e.g. all floors and walls in the kitchen under and behind major pieces of equipment).

Observation (CORRECTED DURING INSPECTION): Food processor container observed with duct tape around the entire outside. The container is also observed with food debris. Staff voluntarily discarded the food processor container during inspection. Staff stated that the operator has ordered a new food processor container.
Corrective Action(s): Do not store equipment which is broken and/or not in good working order. Equipment which is taped is no longer smooth and easy to clean and sanitize between uses which increases risk of potential physical and biological contamination of food. All broken equipment must be replaced immediately and must not be used on site.

- All food observed covered and stored at least 6 inches off the floor - good!
- No hot-holding on site
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Staff washroom not in use. Public washrooms observed supplied with hot and cold running water, liquid soap and paper towel at hand washing stations.
- High-temperature dishwasher measured at 72'C at plate surface (above minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs
- Professional pest control company is contracted
- FOODSAFE Level 1 equivalent trained staff available on site
- Permit posted in a conspicuous location on site
