Observation (CORRECTED DURING INSPECTION): Potato press (used to cut radishes) had accumulation of old food debris; food debris was dried up and staff stated it is normally cleaned prior to using.
Corrective Action(s): Staff cleaned and sanitized potato press at time of inspection. Ensure to clean and sanitize this equipment at least every 4 hours when in use and at the end of the day.

- Bleach sanitizer solution available in bucket at 100 ppm and in 2-compartment sink at 100 ppm
- High-temperature dishwasher reached 73C at plate surface level during final rinse cycle
- Walk-in cooler was measured to be at 3C
- Walk-in freezer was measured to be below -18C
- Food storage practices satisfactory - all food covered
- Dry storage area maintained in sanitary condition
- Discussed thawing procedures for fish - OK. Fish thawed in walk-in cooler overnight
- FoodSafe certified staff on-site
- General sanitation excellent
- No signs of pest activity noted at time of inspection
- Temperature log well maintained and up to date
