Hand wash station supplied with hot and cold running water, liquid soap in dispenser and paper towel in dispenser.
Line cooler food items top and bottom <4C.
Walk in cooler <4C
Walk in freezer <-18C.
Cooling after cooking: operator keeping small quantities of chicken in containers to cool from cooking temperatures to 20C (30min-1hr), cooling the rest of the time in the fridge.
Thawing: operator portions meats into small, lidded containers to freeze, thaws in coolers.

Quat sanitizer spray bottle 200ppm.
Dishwasher chemical sanitizer, 100ppm chlorine.
Food prep counters and food service counters are clean and free of food debris and grease.
Some spilled rice and sugar in dry storage area under the racks. Lighting is dim in this area. Installing a brighter light would help in cleaning this area.

Operator has removed garbage bags (from last inspection) and now uses lids and food grade wrap to cover foods, thank you.

No signs of pests at the time of inspection.
