Note: Pizza added to food menu which is outside of what had been approved at reopening inspection. Pizza sourced from a third party, which is an approved source, is stored frozen and is reheated in counter top oven then served to customer. Hot holding unit on site which was at the proper temperature of 60C or higher, staff said this is only used during peak times. No objections to adding pizza to the menu but only with the current process of bringing pizza fully prepped from an approved source and only a cook-serve process, no additional food processing/prep done of on site.
Ensure that future changes to menu are run by the undersigned EHO prior to implementing them.
General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Food up off floor ≥6”, good stock rotation noted
√√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Hydrogen peroxide based sanitizer in use and was at appropriate concentration
√ High temperature dishwasher sanitizing at ≥71°C
√ Two compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is satisfactory
√ No signs of pest infestation noted
√ Thermometers present for monitoring of cooking and cooler/freezer temperatures
√ Temperature logs maintained and no issues with equipment have been noted
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection |
