Observation (CORRECTED DURING INSPECTION):
Front service and kitchen handwashing sinks do not have a paper towels dispenser found adjacent to the handwashing sinks. Staff are unable to dry their hands after washing them.
Corrective Action(s):
Immediately install a paper towel dispenser adjacent to the front service and kitchen handwashing sinks. During the inspection, a roll of paper towels were placed at each handwashing sink, until a dispenser is installed.

Observation:
Premises does not have a valid food permit decal as they have failed to pay the yearly permit fees of $250 in April 2023.
Corrective Action(s):
Immediately pay the permit fees or closure of the premises will occur.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The high temperature dishwasher is not working as per manufacturer's specification. The temperature gauge dials are broken so staff do not know if the dishwasher is reaching the correct temperatures; the drain plug doesn't stay closed, so inadequate water and soap is present to wash dishes; and the dishwasher is only running one cycle not two. These factors are affecting the dishwasher's ability to sanitize dishes and reach 180F everytime during the rinse cycle.
Corrective Action(s):
Immediately have the dishwasher repaired and/or maintenanced so it is operating as per manufacturer's specification. There must be 2 stages, wash cycle running at 150F and a sanitize cycle running at 180F. The dishwasher must reach 180F or hotter every time during the rinse cycle. The temperature gauges must accurately read the temperatures during each cycle. During the inspection, manager stated that repair company will be arriving tomorrow to service the dishwasher.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; and thermometers present.
- High temperature dishwasher had rinse cycle temperature of 71C at the plate's surface as per max/min thermometer. It took a number of cycles for the temperature to hit 71C. Have the dishwasher fixed ASAP, see violation/correction section. Staff instructed to turn on dishwasher and fill it up when they arrive in the morning, and allow it to heat up for at least 1/2 hour prior to using it.
- Quats sanitizer in spray bottles had 200ppm strength.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has greatly improved from last year. Keep up the good work.
- Rodent activity found in premises. Orkin Pest Company contracted to eliminate pests, tin cans present to trap rodents. Staff instructed to inspect kitchen space every morning for rodent droppings. If found, clean up and sanitize surfaces that came into contact with soap and water, and then spray with sanitizer. Inspect areas for entry points and block all openings that are 1/4" or bigger with metal mesh, metal plates, or tightly packed steel wool.
- Exhaust canopy was professionally cleaned and serviced this month. Next service due in February 2024.
- Valid, FoodSafe certified staff present.

**A follow-up inspection will be completed on Aug. 28/23 to ensure all violations have been corrected**
