Observation (CORRECTED DURING INSPECTION): Sanitizer concentration in the 2nd sink compartment and one of the 2 sanitizer pails was not adequate concentration for sanitizing effectively (<50ppm).
Employees are using Suma Final Step flow-through sanitizer product (quats) for mixing all of the sanitizer solutions. Only one of the two sanitizer pails had the correct sanitzer concentration of ~200ppm at the time of inspection, despite being mixed via the same method (ie. use of the flow-through product) as the other solutions. Attempted to troubleshoot the reason for the discrepancy in sanitizer concentrations for the 2 sanitizer pails and the 2nd compartment in the sink. Based on experimentation in the kitchen, it is suspected that low sanitizer concentrations in some of the mixtures may be due to the rate of water flow being used through the device.
Corrective Action(s): Please discuss findings with the product rep at the next opportunity to determine whether there may be other reasons for device failure.
**Ensure to always confirm the sanitizer solution concentration after use of the flow-through device via test strips. Concentration should be 200ppm on the test strip.
