304 - Premises not free of pests [s. 26(a)]
Observation: Improvements to fruit/drain fly population observed. Still notable in mop sink area, dishpit and to lesser degree walls in secondary areas. Pest control provided pheromone traps, but no other advice. Daily quality cleaning to key breeding environments will be necessary to eliminate problem.
Corrective Action(s): Continue to target key breeding areas as discussed. Find appropriate chemical (possibly foam spray) that can be applied to and act on difficult to access breeding environments like drains, dishwasher filter basket, underside of dishpit work counters, and floor grout where water tends to sit. Recommend to make this chemical spray application part of the last step after end-of-day cleaning.
Review at next scheduled inspection after renovation work in August.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Floor grout in kitchen looks better, but is still subject to accumulations of food debris. Daily cleaning process includes brushing floor and wet vaccuum clean up.
Corrective Action(s): Continue to target kitchen and dishpit.mop sink areas for intensive daily cleaning.

Comments

Lighting upgrade planned for kitchen. Quotes obtained. Work to come and be completed prior to August renovation date.
General cleaning and cleanliness in dishpit better. Leaks stopped on temporary basis - long-term fix forthcoming and to be completed prior to next scheduled inspection.
Kitchen floor still not great, but improvements noted. Continue to target this area, including control of stagnant water accumulations as discussed.
Storage rooms shelving replacement not addressed, but plan underway. To be reviewed at next scheduled inspection. Continue to reduce weight burden on lowest shelves.

Ambient temperature controls in kitchen planned to mitigate excessively hot temperatures along cook line.
