Observation: Further cleaning required underneath and behind cooking equipment. Ensure to scrape off old, hardened grease and food debris in hard to reach corners.

Comments

- Bleach sanitizer solution available at 200 ppm in buckets for storing wiping cloths. Ensure to change solution every 4 hours at a minimum.
- Paper towel was available in dispenser at hand washing station. Ensure to always keep dispenser fully supplied.
- All food stored in coolers were properly covered at time of inspection. Please maintain this!!
- Ventilation canopy baffles have been cleaned. Ensure to clean baffles every week.
- Floors have been cleaned, however some cleaning still required under cooking equipment. (See violation code 306 above).
- Nut grinder was clean at time of inspection. Dough machine was in use.
- No dirty pots and pans were left overnight
- Interior of walk-in cooler and prep cooler have been cleaned and sanitized. Ensure to do this once a week.
- Pest control operator provided services on June 26, 2018 (yesterday). Pest control report available for review. Going forward, email all bi-weekly pest control reports to Ying.Tan3@fraserhealth.ca.

**Reminder that repeat violations will result in further enforcement actions in the future.
**A follow-up inspection will occur to check on sanitation maintenance.
**More staff to take FOODSAFE level 1 by end of July 2018.
