306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Improved cleaning is required. The floor along baseboards and under shelving requires better, more frequent cleaning as there is an accumulation of dirt and food. Some walk in cooler ceilings have dust on them.
Corrective Action(s): Follow a routine, written cleaning schedule. More frequent cleaning of the floors is required. Clean along wall/floor coving.
Clean floor in salad /sandwich prep kitchen, including under shelves near 2 door cooler, under counter near hand sink and along back wall. Clean floor under dry storage shelves and under the stainless steel tables next to the recycling area. Clean dust off of walk in coolers 5 & 8. Provide information on follow up.

Observation: Can under the hot water dispenser in the sandwich prep kitchen has rusted.
Corrective Action(s): Remove rusted can. All surfaces are to be clean and in good condition.

Observation: There is a water leak under the third (sanitizer) sink in the 3 sink pot washing area.
There is a large gap between the main kitchen entrance hand sink and the wall.
Corrective Action(s): Re-caulk behind the hand sink. Repair the water leak under the pot sink.

Main Kitchen:
Food Safe Level 1 - reminder to check dates on Food Safe certificates to make sure that they are renewed /refreshed before they expire. Certificates have a 5 year expiry date.
***Food Safety Plan - Provide information on follow up for when cold food in the re-therm carts have temperatures above 6 C. Is time tracking done?***
Probe thermometers - are sanitized prior to use. Temperature records are being kept.
All coolers are at 4 C or colder - good. Plating room is also temperature controlled (10 C).
Defrosting is carried out in cooler (4 C).
Reheating - temperatures are taken.
Hand washing sinks have liquid soap and paper towels in dispensers. Some hand sinks are foot controlled.
Non-latex gloves also available. Uniforms/aprons and hairnets worn.
Quats sanitizer - 4 tested and all at 200ppm - good.
Cart cleaning area is used for cleaning and disinfecting carts.
Dishwasher has a final sanitizing rinse of >180 F (>82C) and >160 F (>71 C) was measured inside of the machine.
Sanitation plan and cleaning schedule - see above.
Note: The basement walk in freezer was not checked today (was checked during last routine inspection).
Coolers and freezer are on an alarm system - good.
Pest control monitoring is in place.
