Observation (CORRECTED DURING INSPECTION): Upon arrival of EHO, the exterior surfaces of the bone saw had been cleaned and sanitized. However there was still significant meat debris under the chain cover. Manager informed it was last used this morning (time of inspection was after 3PM).
Corrective Action(s): Staff began cleaning and sanitizing this part at the time of inspection.

Ensure all parts of the bone saw are properly cleaned and sanitized after use. If using for long periods of time, make sure to clean and sanitize every 4 hours.

Observation (CORRECTED DURING INSPECTION): 3 coolers (main walk-in cooler, and 2 other display coolers next to the meat processing area) measured above 4C:
> Walk-in cooler: 7.0C
> Meat display cooler: 7.3C
> Eggs/tofu display cooler: 7.9C
Corrective Action(s): Manager adjusted the temperatures immediately. All coolers measured 4C or colder by the end of the inspection.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Temperature gauge for the walk-in cooler is broken, no thermometer found inside the unit.
Corrective Action(s): Repair the temperature gauge or replace the thermometer inside.

Grocery store with repackaging and meat processing.

> Running hot and cold water is available.
> Handwash station in processing area is fully supplied with liquid soap and paper towels.
> 200ppm bleach solution readily available in sanitizer buckets. Chlorine test strips are available.
> Bleach available for manual warewashing of trays, knives and cutting boards.
> All store coolers (except for the walk-in cooler and 2 open display coolers adjacent to coffin freezers) measured 4C or colder.
> All store freezers measured -18C or colder.
> General sanitation throughout the store is satisfactory.

Note: observed several boxes of produce stored directly on the ground in the walk-in cooler. Manager informs that these boxes are typically sold within 2-3 days.
> Discussed with manager, all food items should be stored above the floor not just to help with cleaning but to protect the food from contamination.
> If any significant sanitation or food storage issues are observed in this area during future inspections, ALL boxes must be stored above the ground by any means.
