Observation (CORRECTED DURING INSPECTION): - Pizza toppings (cheese, sauce, various meats, cut vegetables): 5.1C to 6.0C
Corrective Action(s): - Employee in charge or preparing pizzas proposed to discard unused leftover toppings every two hours so that toppings could still be stored at pizza prep area as next closest cooler is located too far away for ongoing pizza prep to be operationally functional. Inserts containing toppings are minimally filled up. Employee demonstrated time track form and advised that procedure would be reviewed during shift change with next employee in change of preparing pizzas.

Note: Toppings (entire inserts) had just been refilled.

2. Grime and food debris accumulation noted on meat slicer surface. Heavy grime, grease and food debris accumulation noted on bottom edges and under meat slicer.
Corrective Action(s): 1. Wash and sanitize ice scoop and container. Run ice scoop and container through dishwasher cycle.
2. Clean and sanitize entire meat slicer.
