Observation (CORRECTED DURING INSPECTION): Mechanical dishwasher measured 10ppm chlorine.
**Corrected during inspection** Operator switched to manual ware washing temporarily. Operator to purchase more dishwasher sanitizer immediately.

All equpiment is to be washed again after sanitizer is purchased.
Please develop and maintain a sanitizer concentration log, checked twice daily (am and pm).

Observation: 1. Scoops observed to be stored in ingredient and ice container.
2. Bottles reused from milk badam observed to be used to hold spices and be modified into spice shakers.
**Corrected during inspection** "Spice shakers" are not to be used.
Corrective Action(s): 1. Scoops are to be stored outside food containers in a separate food-grade container. Both scoop and container is to be cleaned and sanitized every day.

Observation: Preparation sink observed to be filled with lamb submerged in warm water (16.7°C). Staff stated meat was in there for 30 minutes.

2. In cold water, water changed every 30 min

4. In a microwave (only if product is cooked immediately)

Knives in use are to be cleaned and sanitized every 2 hours.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No pest activity observed at time of inspection
Kulfi (Malai, Pistacchio) observed in chest freezer. Operator stated this comes from Aarav Punjabi Kulfi.
Milk badam in unlabeled bottles observed in 1 door display cooler. Operator stated this comes from Aarav Punjabi Kulfi.
