Observation (CORRECTED DURING INSPECTION): 2 containers of raw frozen meat and a container with raw fish soaked in water were sitting at room temperature. Temperature of frozen meat/fish recorded below 4C. Staff moved all the containers back into cooler.
Corrective Action(s): To prevent the risk of food contamination due to pathogen growth and/or toxin production, follow one of the following thawing methods:
- Place frozen food in cooler overnight at a temperature of 4C or lower
- Under cold running water

Routine inspection conducted.

- Temperature of cooler found at or below 4C
- Temperature of freezers at or below -18C
- Cooked rice hot held at 70C
- Sushi rice recorded at 45C and pH at ~4.0 (below 4.2)
- Staff was prepping and cooking for lunch rush hour and was aware to not leave cold potentially hazardous food at room temperature for more than 2 hours.
- 200ppm bleach solution present in sanitizer spray bottles.
- High temp mechanical dishwasher reached 74C at dish surface during rinse cycle.
- All handwash sinks were adequately supplied with hot and cold running water, liquid soap and single use paper towels.
- Food storage practices were satisfactory.
- Equipment found in good sanitary condition.
- Staff has valid FOODSAFE Level 1 (Exp Jan 10, 2028)
