Discussed the following with the operator:
Obtain chlorine test strips to test low-temperature dishwasher every day (dishwasher lines can become plugged/non-functional in between professional servicing) - record in a log
Obtain quats test strips to test quats sanitizer at dispenser every day (dispensers can lose calibration in between professional servicing) - record in a log
Top prep cooler temperature runs high - Lower top prep cooler lid during slow periods; half-fill containers to be used in 2 hours

Routine inspection:
Handsinks equipped with hot and cold running water, liquid soap and paper towel
Low temperature dishwasher reached 120F (min/max probe thermometer) and had 80 ppm chlorine at the plate level upon final rinse cycle
Quats sanitizer concentration in spray bottles at 200 ppm
All coolers operating at </= 4C; thermometer gun available
All freezers operating at </= -18C
Monitoring logs mostly maintained *few days missing - make a daily habit
Foods hot-held >/= 60C
Permit posted with a valid decal
No signs of pests observed; no obvious entry points; UV fly light in-use
