Observation (CORRECTED DURING INSPECTION): Prep cooler storing potentially hazardous foods at 9.3°C. Operator mentioned cooler recently had a part repaired and as a result food started to partially freeze. Operator claims the cooling dial was turned down as a result of the freezing. Interim: Move potentially hazardous foods to the walk-in cooler to ensure food is kept at 4°C or less.
Corrective Action(s): Do not use prep cooler until the cooler is adjusted/repaired and is storing food at 4°C or less. Environmental Health Officer will follow-up to ensure prep cooler is at 4°C or less.

Comments

-Ensure buckets with sanitizer are replenished and/or measured routinely. Staff member suggested time-marking the buckets with chalk.
-Ensure no bowls/cups are used for dispensing from bulk food containers
-Operator mentions exhaust vent has had on-going issues ventilating. Operator claims a service person is scheduled to come within the week.
-Quats dispenser measured at 200ppm
-Walk-in cooler measure at 2.9°C
-All hand sinks have the following:
→liquid soap, paper towel and hot/cold running water
-Overall cleanliness is good
-No evidence of pest activity at time of inspection
-Observed good hand-washing procedures
-Discussed Food Safe Level 1 certificate expiration
-Food in walk-in cooler is organized and covered
-Food is stored 6 inches above ground or greater.
