Observation (CORRECTED DURING INSPECTION): A sanitizing pail was created, but cloths were observed lying around the prep cooler area in visibly soiled condition.
Corrective Action(s): All cloths immersed inside the sanitizing pail. Do not leave any cloths outside, as they will accumulate grime over time and continue to contaminate food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Multiple items in prep cooler inside the kitchen area (cooked chicken and sauces) were not covered.
Corrective Action(s): Immediately cover the cooked chicken and sauces inside the prep cooler. Food products should be covered at all times to protect from contamination.

Comments

Routine inspection conducted. Following observations were made:

1. Temperatures
- Walk-in cooler (LEFT) at 4C
- Walk-in cooler (RIGHT) at 2C
- Chest freezer at -22C
- Front stand-up domestic freezer at -10C *Please service and ensure that it maintains -18C or below*
- Prep cooler (bottom) at 2C; Prep cooler (top) at 4C
- Display rotating hot-holder at 61C
- Beverage cooler at 4C
- Temperature logs updated and up-to-date

2. Hygiene and Sanitizing
- Hand wash stations all stocked with hot/cold running water, liquid soap, and single-use paper towels - good. Ensure that you keep it this way from now on
- Bleach sanitizing pail available at 200 ppm; however, cloths were not immersed inside the sanitizer and were visibly soiled (see violation code above)
- Dough mixer was in use during the inspection - ensure that you properly wash, rinse, sanitize the dough mixer after use

3. Storage
- Food products stored at least 6" off the floor
- Dry storage area upstairs generally in good sanitary condition
- Yogourt in walk-in cooler (RIGHT) obtained from A.S. Laddi and marketed by Ariana Dairy. Ensure that you keep ALL yogourt invoices with you. A reminder that no yogourt is allowed to be produced in the facility

4. Pests
- Traps opened did not contain any rodents
- No recent, visible signs of pest activity observed during the inspection

5. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1, along with two employees
- FoodSafe 1 certificate will expire in July of 2019 - ensure that you renew your FoodSafe 1 before it expires, either online or by going to an approved FoodSafe 1 instructor (see www.foodsafe.ca for further details)
