Observation:
- Small ice machine observed with black stains.
Correction:
- Clean and sanitize after turning the machine off and emptying all ice out.

Comments

- Time tracking done properly for bubble tea toppings; labels observed.
- Cheese foam mix probed at 1.3C in the machine. Operator stated that temperature setting has been lowered down.
- Undercounter cooler is not in use anymore; there are enough extra cooler storage in the facility. Operator to use this unit for storage OR remove it from the facility in the future.
- Tea cooler temperature setting has been lowered down as per the operator. Ambient temperature measured at 5.1C at the time of inspection. Staff stated temperature of 2-3C is observed in the morning.
- Sanitizer measured at 200ppm chlorine. Ensure to use bigger buckets for storing red (color code) wipes.

Note: Operator will be removing the small ice machine from the facility.
