Observation (CORRECTED DURING INSPECTION): Ice machine was found to have large amounts of mould growth.
Corrective Action(s): Ensure equipment is maintianed in a sanitary condition and foods are protected from contamination. Ice machine was disconnected at the time of inspection to melt the ice.

Observation (CORRECTED DURING INSPECTION): Phones were placed on the cutting boards.
Corrective Action(s): Ensure phones are stored in a designated location and not on food contact surfaces to prevent potential cross contamination of surfaces. Phones were removed and cutting board was sanitized with 200ppm Quats sanitizer at the time of inspection

Observation (CORRECTED DURING INSPECTION): 1) Ice machine was found to have large amount of mould growth along the dispenser cover.
2) Potato cutter was found to have dried potato debris on the blades.
Corrective Action(s): 1) Ensure ice machine is cleaning and sanitized on a regular basis to prevent potential contamination of ice. Ice machine was disconnected at the time of inspection to melt the ice in order to clean and sanitize the ice machine.
2) Ensure all equipment is properly cleaned and sanitized after each use to prevent potential contamination of foods and potential attraction of pests. Potato cutter was cleaned and sanitized at the time of inspection.

Observation: 1) Raw meat was stored above ready-to-eat foods
2) Foods in the walk-in cooler were not properly covered.
3) Mango puree was stored in an opened metal can.
Corrective Action(s): 1) Ensure raw meats are stored below ready-to-eat foods to prevent potential contamination of foods.
2) Ensure foods are properly covered with food grade materials to protect foods from potential contamination.
3) Once canned foods are opened, the contents must be transferred to food grade containers to prevent potential contamination of foods.

Comments

-Walk-in cooler was at 3C.
-Prep coolers were at 4C (top and bottom).
-Chest freezer was at -23C.
-Upright freezer was at -13C.
-Cooked sauces rapidly cooled using mixing wands. Sauces were cooled to 2C to 5C in the walk-in cooler.
-Cooked chicken properly cooled and was at 4C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm bleach on the dish surface (minimum of 50ppm required for proper sanitizing).
-Quats sanitizer spray bottles were labelled and tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General sanitation good at the time of inspection.
-Washroom clean and sanitary. Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 19, 2023
