Observation (CORRECTED DURING INSPECTION): Cooked onions and mushrooms on the hot holding unit measured with an internal temperature of 55C. At least 60C is required to properly hot hold any potentially hazardous food.
Corrective Action(s): Staff moved the aforementioned food items to the flat grill to reheat them to 74C. Hot food must be hot held at 60C or above.
