Observation (CORRECTED DURING INSPECTION): Dirty pizza knives stored on a wall-mounted magnet (food debris are dried up on surfaces).
It was no pizza preparation at the time of inspection.
Corrective Action(s): Immediate. Clean and sanitize pizza knives. Ensure that only clean knives stored on the magnet.

Kitchen:
General sanitation - satisfactory.
Most of all hand-sinks supplied with liquid soap, paper towels, hot/cold running water.
Note: Ensure that liquid soap is available near a two-compartment sink at prep. area. (It was no food preparation at the time of inspection.)
Prep coolers across stove: right - top at 4.0C/bottom at 2.3C; left -top at 4.0C/bottom at 1.2C .
Walk in cooler and freezer combo: cooler at 3.2C; freezer at - 18.0C.
Beverage walk-in cooler at 3.8C.
Coolers in the back area/storage at 4.0C or less.
All other freezers at -18.0C.
Hot holding not in use at the time of inspection (and empty).
Ice-maker - satisfactorry.
Low temperature dishwasher at 100 ppm of Chlorine solution.
Surface sanitizer/spray (Quat) at 200 ppm.
Overall food storage - satisfactory.
No signs of pests noted at the time of inspection.
