Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: - High temperature dishwasher measured 63.8C at the final cycle on the dish level.
Correction: - Repair the dishwasher in order to reach temperature to 71C. As there is an event tonight, there are 2 options: cancel the event; wash all the equipment in the 2-compartment sink, serve clients with single use utensils.
- Make 100ppm bleach in the 2nd sink by adding 10 teaspoon bleach in 20L water to sanitize the equipment.

Health Inspector came back to the facility at 4:30pm to conduct a follow up inspection on dishwasher.
- Technician was working on the dishwasher, the temperature measured 70.5C at rinse cycle. But after a few cycles, temperature dropped to 68C.
- Technician stated that it needs a booster aprts, which is impossible to get it replaced this week due to supply chain crisis.
- Technician could keep the temperature at 70.5C for tonight's event. He will convert the high temperature dishwasher to chemical one (chlorine) until the parts is delivered here.
- Remind the owner to keep monitoring the dishwasher during the event.
