Code 301 noted on Routine inspection # AJON-CJNSU6 of Sep-27-2022 Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] Observation: Baffles of ventilation canopy full of debris, dust and grease. Correction: Clean baffles of ventilation canopy. Ensure to clean the canopy on a regular basis to ensure the equipment is working properly and to prevent a fire hazard. To be corrected by September 29, 2022.

Follow-up Inspection: Note: kitchen not in operation at the time of inspection. Baffles and fixtures of ventilation canopy have been cleaned. All food items covered and protected from contamination in walk-in cooler and storage areas. No rat droppings found in facility. Back door closed at the time of inspection. General sanitation of facility has improved significantly, especially in the following areas: - Floor of walk-in cooler - Fan grates in walk-in cooler - All shelves and floor in dishwashing room - Floors and walls throughout kitchen - Under all sinks and equipment - Hard to reach areas Caulking for hand sink and pre-wash sink replaced. Ensure to turn on dishwasher at least 1 hour before putting dishes through. Thank you for your efforts. Operator signature not required due to the COVID-19 Pandemic.
