Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in spray bottle at sushi bar was at 0 ppm.
Corrective Action(s): Mix 1 tsp bleach to 1 litre of water for proper concentrations. For larger buckets in back kitchen, mix 1 oz bleach with 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): Server hand sink was missing soap. Hand sink in back kitchen area was missing paper towels.
Corrective Action(s): As previously discussed, ensure each hand sink is supplied with liquid soap and paper towels.

Observation: Some surfaces in kitchen were being lined with tin foil.

- Reminder that EACH hand washing station must be equipped with liquid soap and paper towels.
- Reminder that bleach sanitizer solution in bucket must be changed every 2 hours, and wiping cloths must be stored in this solution.
- High-temperature dishwasher reached 74C at dish surface during rinse cycle.
- All coolers were maintaining temperatures at 4C or colder
- All freezer temperatures satisfactory
- Hot held rice and miso soup measured to be above 60C
- Food storage practices satisfactory - all food properly covered. **Ensure dry ingredient bags are not stored on the floor.
- No cardboard is being used to line shelves - good. Ensure not to use tin foil either.
- Accurate thermometers available in each cooler - good.
- Reminder that frozen food must be thawed in a cooler or under cold, running water.
- Ventilation canopy and ice machine were observed to be clean - good.
- No signs of pest activity noted
- Temperature logs not available. **Must be better maintained.
