Observation (CORRECTED DURING INSPECTION): - Cut pickled radishes and sauces to be stored refrigerated (4C or below) were in domestic cooler which had an ambient temperature of 11C. Temperature of unit was not being monitored therefore unknown period of time that unit was greater than 4C
Corrective Action(s): - Discard potentially hazardous foods which have been in domestic cooler for greater than 2 hours. Transfer potentially hazardous foods which have been in domestic cooler for less than 2 hours to another cooler which is 4C or colder.

Observation: - Domestic style fridge was not maintaining a temperature of 4C or colder. Temperature in interior unit was 11C. Fridge is used for storage or staff lunches, extra canned pop, sauces and pickled radishes and uncut produce (lettuce)
Corrective Action(s): - Adjust of repair cooler so that it maintains a temperature of 4C or colder. Do not store any potentially hazardous foods (including any cut vegetables) in unit until it is maintaining a temperature of 4C or colder.

Comments

- Premises maintained in sanitary condition.
- Handwashing sink was supplied with liquid soap and paper towel
- 3 compartment sink set up for manual dishwashing. Sanitizer solution in compartment for sanitizing step measured 100ppm chlorine.
- Food contact surface sanitizer present in labelled spray bottles. Concentration measured 200ppm chlorine.
- Food is stored in a manner to prevent contamination. Foods are covered/wrapped and dry goods are stored on shelving off of the floor.
- Controls are in place to prevent cross contamination. Raw chicken (and batter for raw chicken) is stored in separate coolers from vegetables (radishes and lettuce). Raw chicken battering is completed on a separate surface/area from cooked/ready to eat items.

Temperature controls:
- Countertop beverage cooler 4C
- Small undercounter cooler (condiments) 1C
- Worktop cooler 3C
- Chest freezer -21C
- Single door reach in cooler (chicken) 3C
- Single door reach in freezer -11C
- Thermometers were present in coolers for temperature monitoring with the exception of the domestic style fridge (as noted in violation above). Ensure temperatures of all cold holding unit are monitored and the temperatures recorded.

- No signs of pest activity noted at the time of the inspection.

- Foodsafe requirements met at time of the inspection.
