Observation (CORRECTED DURING INSPECTION): 1 of the 3 soups in the hot holding unit was found at an internal temperature of 54 C - the other 2 were > 60 C. Upon questioning the manager, it was found the soup was prepared and placed in the hot holding unit at 9:45 am and it is now 11:30 am.
Corrective Action(s): The soup was reheated in the microwave prior to being replaced in the hot holding unit by operator.
Upon checking the soup was now at 62.7 C.

Hand washing sinks were stocked with hot water, paper towel and liquid soap
Coolers were less than 4 C
Freezer was less than - 18 C
quats was at 200 ppm concentration in spray bottles and the dish washing sink.
Hot holding unit soups other than the above were greater than 60 C
