Observation (CORRECTED DURING INSPECTION): Observed can opener not in sanitary conditions. Dried food debris was noted. Drying rack above the three compartment sink was not in sanitary conditions. When scrubbed with wet paper towel, grease and other debris came off of the rack. Regular cleaning of these items and locations are required.
Corrective Action(s): Required operator to clean and sanitize the can opener once used. Drying rack should be cleaned and sanitized as clean utensils and containers stay on top. Operator started the cleaning process before the end of the inspection.
