Observation: Shelving unit observed to be both loose and as well the shelving material has deteriotrated on the far wall surface in the cooking area.
Old wall brackets observed in place from the salamander unit which has been removed from the premises. Wall brackets impede work space environment.
Old fire supression for the salamander unit observed to be impeding work space environment.
Corrective Action(s): Replace shelving.
Remove old wall brackets
Have technician make adjustments to the supression noozles in the vicinity of the old salamander unit as discussed.

New non slip floor installed in the kitchen to replace the old tiles.
New LED lighting installed inside the walk in cooler. Illumination substantially increased
New LED lighting installed in front food preparation area
New stainless steel shelving installed in front food prep area replacing the old damaged arborite surface
New grill and sandwich prep coolers installed in front food prep area.
Salamander unit removed
Kitchen hand sink plumbing repaired
Mop sink is located on the same floor outside the bar area.
*Recommend purchasing a flashlight for checking the meat slicer cleaning
*New stainless steel to be installed to replace the old coving material in the kitchen
Meat slicer observed to be clean
Monitoring logs are being maintained
New sandwich prep coolers cold holding at <4c
