201 - Food contaminated or unfit for human consumption [s. 13] Observation (CORRECTED DURING INSPECTION): Sliced and peeled cantaloupe and cut squash in display cooler and in walk-in cooler not labeled as to when these products were prepared and questioning the staff they were not sure who prepared the packages and who was to label. Corrective Action(s): All unlabeled foods to be discarded unless operator can provide a written logs confirming production. Training of all staff in food safety procedures and the requirements of the food safety plan must be completed before any employee is tasked with the preparation and packaging of cut fruit and vegetables. Operator must ensure that all food workers are supervised and have the appropriate FOODSAFE certificates. This has been an ongoing infraction, progressive enforcement implemented, written order issued. Violation Score: 15

Make sure that whole fruits and vegetables (bags of apples, mushrooms, banana's etc) are not kept in air tight plastic bags, make sure that there is "air" for these products to breath by either using a permeable bag or not sealing standard plastic bags. General sanitation fair, no indications of insect or rodent infestation.
