Observation: 1. More than 200 ppm chlorine residual detected in the bar sanitizer container.
2. Excessive ice buildup noted in the reach-in freezer beside the handwash station upon entry into the kitchen.
3. Multiple containers of food stored unprotected in the walk-in cooler, walk-in freezer and reach-in units.
Corrective Action(s): 1. **Issue corrected at the time of inspection** Staff diluted the sanitizer container. 200 ppm chlorine residual was detected from the container.
2. Defrost the unit and ensure no excessive frost is accumulated in the unit to avoid potential contamination to food. This is especially important as the food in this unit is not stored protected. As per staff, operator is planning to replace this reach-in freezer unit with a new unit.
3. All food, especially food not being actively used during lunch or dinner rushes, must be stored protected and covered (plastic wrap or lid) to avoid potentia contamination to food.

Observation (CORRECTED DURING INSPECTION): Few mouse droppings were noted behind the stand mixer.

Staff cleaned the area during the inspection. Please ensure to monitor this area. If pest droppings re-appear this may be a sign of a mouse issue in the facility. If so, work with the pest control company to help mitigate this issue.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were holding cold food at 4C or less.
All freezer units were at -18C or less.
Hot hold unit were holding hold food at more than 60C.
200 ppm chlorine residual detected in the 2 sanitizer buckets in the cooking area.
100 ppm chlorine residual detected from the low temperature dish machine.
12.5 ppm iodine residual detected from the bar dish machine.
Sanitation of the facility has greatly improved.
Good organization noted during the inspection.
