Observation:
1) Ice machine has mould and mildew build up within.
2) In-use utensils only washed at the end of the day.
Corrective Action(s):
1) Wash, clean and sanitize the ice machine. Ensure ice is emptied to prevent cross-contamination when using sanitizer.
2) This is a repeat violation - see report from Sept 14, 2020. In-use utensils must only be used for a maximum of 4 hours before being fully washed, rinsed and sanitized.

General:
- handwashing station stocked with soap, paper towels and hot and cold running water
- bleach sanitizer measured 200ppm chlorine in front spray bottle and in back sanitizing sink
- use front double sink for food prep, and use back three compartment sink for warewashing to prevent cross-contamination
- general sanitation is satisfactory
- FOODSAFE requirements met
- pearls are either used or discarded within 2 hours of production
