Observation (CORRECTED DURING INSPECTION): Large dough mixer was not cleaned after being used last night according to the operator. Dough residues were observed on the metal surface.
Corrective Action(s): Ensure to always clean and sanitize the mixer immediately after use. Operator cleaned the mixer at the time of inspection.

Observation: - 2 uncovered containers with dimsum filling observed in the walk-in cooler.
- Rodent baits observed in the electrical room (back of the kitchen)
Corrective Action(s): - Ensure all food items are covered and protected from contamination during storage.
- Baits are not allowed in food premises. Install a trap instead. Remove all the baits.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Extensive amount of empty cardboard boxes observed in the back kitchen and the front customer areas.
- Plastic trays with sauces and seasonings are observed with sticky residues and lined with paper underneath.
- Lots of clutters observed throughout the premises.
- Vent hood panels observed with notable amount of grease stain.
- Water pooling observed at the left front corner of the walk-in cooler.
- Old sticky trap observed with dead insects in the electrical room.
Corrective Action(s): - Operator stated the cardboard boxes are used to store dimsum when being put into the freezer. The number boxes being stored for future use appears to be overly excessive to the actual number of boxes required for storage. Discard the majority of the boxes and keep the boxes only at a designated location.
- Clean and sanitize plastic trays. Discard the paper linings. Ensure to clean and sanitize the trays and the shelf on regular basis.
- Organize all the cookwares and equipment. Remove any itmes not in use. Discard old items.
- Wipe all the water and clean the floor in the cooler.
- Clean the vent hood panels.
- Remove or replace the sticky trap in the electrical room.

Observation: Lots of miscellaneous items present at the facility: bike at the front counter, screw drivers and hammers under the stove, stationary items on top of metal counter. Most of the cooler units are in use for storage purposes. Old can containers used for storage.
Corrective Action(s): Remove equipment from the premises if they are not in use. Do not store your personal items in operational areas. Store the tools in more organized manner eg. in a tool box.

All handsinks are fully equipped.
Walk-in cooler at 1C.
Walk-in freezer at -18C.
Dimsum Freezer at the front at -12C. Most of the freezers were turned off and not in use at the time of inspection.
Bleach sanitizer is available in spray bottle and is measured at 200ppm with chlorine test strip.
Meat slicer is clean - operator states he last used it 2-3 months ago to cut Chashu meat.
Manual dishwashing method is used for dishwashing. Ensure to sanitize all washed utensils/cookwares by submerging them into 100ppm chlorine solution and then air dry.
Dry ingredient storage bins are maintained.


General sanitation and organization need improvement. A follow up inspection will be conducted to ensure all the violation item noted above are corrected until Feb 25, 2022.
