- Pizza kitchen is located in the back room. Operator is still not making pizza onsite at this time; frozen pizzas purchased from approved grocery stores are heated using the pizza oven, sliced in the pizza kitchen/back room, and placed in hot-holding unit for selling pizza by-the-slice. Only one pizza is held at a time, and is held for less than 2 hours.
- Hot-holding unit measured 60C.
- Hand sink properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink was properly set up for manual warewashing. Chlorine-based sanitizer solution available at 100 ppm. Sinks maintained in sanitary conditions and sink drain plugs available.
- Accurate thermometers available.
- Pizza prep cooler not in use, as pizzas are no longer made onsite. Only used as dry storage.
- Freezers measured at -18C or colder.
- Food storage practices satisfactory
- General sanitation satisfactory
- Regular pest control in place. No signs of pest activity noted at time of inspection.
- Operator has valid FoodSafe level 1 certificate (expires September 2023 - ensure to take the refresher course prior to expiry date).
