Observation (CORRECTED DURING INSPECTION): Knives stored dirty with dry, crusted on food debris, and placed in a slot between the prep fridge lid and its housing. Clean knives frequently and before storing, and do not store in spaces that can't be cleaned properly.

Observation (CORRECTED DURING INSPECTION): Used cleaning cloths were observed on food prep counters and cutting boards without any trace of sanitizer. Bleach sanitizer prepared at time of inspection.
