Observation:
Several dirty/soiled utensils and cutting boards are stored underneath prep table to be used over and over again.
Corrective Action(s):
Properly wash, rinse and sanitize all utensils and cutting boards before usage. Dirty/soiled utensils, equipment and food contact surfaces are not to be used until they have been adequately washed, rinsed and sanitized. To be corrected immediately.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION):
1. Kitchen hand washing station was blocked with a Rubbermaid container stored directly inside the hand sink. An employee removed the Rubbermaid container during the inspection.
2. No liquid soap available at the kitchen hand washing station. When questioned, an employee moved the liquid soap dispenser from the washroom hand sink and placed it at the kitchen hand washing station.
3. No liquid soap available at the washroom hand sink because an employee moved the liquid soap dispenser to the kitchen hand sink in front of the health inspector.
4. No liquid soap available at hand washing station across walk-in cooler.

ADEQUATE HAND WASHING STATIONS NOT AVAILABLE FOR EMPLOYEES IS A REPEAT VIOLATION. STANDING CORRECTION ORDER ISSUED.
Corrective Action(s):
Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water at all times and easily accessible.

Standing correction order issued for unavailable hand washing stations. Any future repeated violations regarding inadequate hand washing stations will result in an immediate violation ticket.

Observation (CORRECTED DURING INSPECTION):
Open bag of all purpose flour found in dry storage area. This open flour bag was stored directly beside the mop bucket.
Corrective Action(s):
Place open bag of flour into a food grade container with a lid.

211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
Observation:
Walk-in freezer temperature measured at 0 degrees Celsius with infrared gun thermometer. Two items were probed in freezer: one item (close to the door) measured -0.5 degrees Celsius and the other (furthest from the door) measured at -1.6 degrees Celsius. All items in the walk-in freezer were almost completely thawed.
Corrective Action(s):
Transfer items to the walk-in cooler at 4 degrees Celsius as these items have been thawed and are no longer frozen. To be corrected immediately.

Clean all the areas listed above by February 26, 2018.

Observation:
Tap knob for prep sink is broken.
Corrective Action(s):
Replace/repair knobs for prep sink so that hot and cold water can be dispensed properly. To be corrected by February 23, 2018.

Observation:
Walk-in freezer not functioning properly as the condenser is not working. Operator informed that the technician has been called and should be coming in today. In addition, because the restaurant is closed on Wednesdays, the staff is unsure how long the freezer has been broken for.

Correction Order Issued.
Corrective Action(s):
Repair walk-in freezer immediately.

Observation (CORRECTED DURING INSPECTION):
1. Can of WD-40 stored directly on top of "clean" dishes.
2. Bleach bottles stored on shelf above flour in dry storage area.

Move all chemicals to a designated storage area that is away from food and dishes.

Routine Inspection:
- All coolers maintained at or below 4 degrees Celsius.
- Bleach sanitizer in kitchen = 200 ppm.
- High temperature dishwasher sanitizing with 83.6 degrees Celsius at dish level for final rinse.

*****Start temperature logs for all coolers and freezers. These logs need to be displayed on the doors of the cold-holding units and recorded every day.*****
