Observation: A mug was observed in a sugar bin underneath the prep counter. Scoops stored in a flour bin and two chicken seasoning bins were in unsanitary condition.
Corrective Action(s): Ensure to use proper scoops throughout the facility. Ensure the handles are maintained in sanitary manner and not in contact with food .

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at or below 4'C; Freezers operating at or below -18'C
NOTE: Pizza prep cooler had ambient air temperature ranging in between 5-6'C due to lunch orders.
NOTE: Stand up freezer under defrosting cycle at this time and had temperature at -12'C. Operator will monitor the temperature drops down to -18'C again after the cycle is finished.
-Hot-holding units operating above 60'C. Thermometers available for temperature monitoring.
-100-200ppm chlorine solution prepared in a labelled bucket to hold wiping cloths.
-Dishwashing sink equipped properly for manual dishwashing.
-General food storage practice satisfactory.
-Ventilation canopy hood maintained and serviced.
-Washroom satisfactory. Back storage area satisfactory.
-No evidence of pest activity observed at this time.

NOTE: Staff was washing the dough mixer at this time. Ensure flour dust on surface of the machine is removed on a regular basis as well.
NOTE: A hose was connected at the mop sink faucet to fill up the mop bucket. Operator had advised this sink is used for this purpose only. Ensure the hose is never immersed in any liquid solution to prevent potential back up.

**Facility had every other table taped to maintain physical distancing between each table.

General sanitation of the facility satisfactory at this time. Inspection report to be emailed to owner.
