Routine Inspection: Note: facility not in operation at the time of inspection. - Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water. - 3-compartment sink available for manual warewashing. Sink plugs available. - Concentration of QUATs sanitizer at 3-compartment sink = 200 ppm. - Under-counter coolers maintained below 4 degrees Celsius. - Thermometers available in coolers. - Foods covered and protected from contamination. - Bulk rice stored in a pest proof container. - No sushi rice present on the counter for pH testing as the facility was not in operation. - No rice observed to be soaking at room temperature. - Overall cleanliness and maintenance satisfactory. - No signs of pest activity at the time of inspection. ***Operator was in the process of getting the replacement Permit to Operate since the last inspection.
