Corrective Action(s): Prep cooler lid was closed and temperature was probed again in 10 min. Temperature measured at 3.2C. Discussed with operator to close lid when prep cooler is not in use. Cold potentially hazardous food need to be stored under 4C to prevent microbial growth.
