Follow up inspection:

-Taco bell ingredients (including the gaucomole) were refrigerated at or below 4 degrees C. Time-stamps were in place for quality control purposes. 4 hour time stamps are not a regulatory requirement for food safety controls if the Taco Bell potentially hazardous food ingredients are kept refrigerated at or below 4 degrees C during storage and/or display. Continue to follow the KFC/Taco Bell corporate procedures for time-tracking for quality control purposes.
-Note: Cooler below the top refrigerated inserts for taco bell ingredients was empty of food and was not in working order. It was not being used for storage of cold potentially hazardous food. Do not use the lower cooler unit for storage of cold potentially hazardous food until it is able to maintain temperatures at or below 4 degrees C.
