Routine inspection conducted. - Hand washing stations including washrooms, supplied with hot/cold running water, liquid soap and paper towel in dispenser and observed accessible. Staff observed washing hands with adequate frequency. - Chicken internal temperature measured at 74 C or hotter in thickest part of the piece. Temperature monitoring log available. - Chicken prep station noted well maintained. - Hot holding units for all hot foods measured at or above 60 degree C. - Walk in cooler measured at 4 degree C or colder. Walk in freezer measured at -20 C. All other coolers measured at or below 4 C. - QUATS sanitizer with 200-400 ppm residual available in sani buckets. Proper label noted on containers. - Ice maker noted well maintained. Ice well kept clean and maintained. Scoops stored in sanitary condition. Running water noted for all hot food scoops. - Storage kept clean and organized. No sign of pest activity noted at this date. - General sanitation is very good.
