209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Over 200 PPM chlorine residual was detected in a sanitizer spray bottle. Test strip bleached out.
2. Bowl was being used and stored within a bulk flour container.
Corrective Action(s): **Issues corrected at the time of inspection**
1. Sanitizer spray bottle diluted. 200 PPM chlorine residual detected after the dilution.
2. Operator removed the bowl and replaced it with an appropriate dispenser with a handle. Remember to store dispenser with the handle extending out of the food.

304 - Premises not free of pests [s. 26(a)]
Observation: 10+ fresh mouse droppings noted on the floor below the prep table holding the rice cooker in the kitchen area and also behind the dish machine.
Corrective Action(s): 1. Sweep, clean and sanitize all areas noted with mouse droppings. Move the prep table out of the way and clean the floor below this area.
2. Speak to your pest control company (no activity noted inside from recent report - report dated Aug 18, 2023) and tell the contractor where the droppings are noted from this report.
3. Continue to work with your pest control company in addressing pest issue.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Grease and carbon buildup on the backsplash area of the deep fryer.
2. Debris noted in the interor (door) of the dishmachine.
Corrective Action(s): Wash, rinse and sanitize all areas mentioned above and maintain in a sanitary condition at all time.

Routine inspection conducted today:
- Handwash stations (including public washrooms) accessible, equipped with hot and cold running water, liquid soap and paper towel.
Note: Main kitchen handwash station only has hot water available however as per operator, it never gets too hot that is uncomfortable to wash hands. During the inspection, warm water was noted coming from the tap when this sink was used for handwashing.
Operator must turned on or fix the cold water tap in the event the hot water tap along dispenses water too hot that will impede proper handwashing when required.
- All refrigeration units were noted at 4.0C or below.
- All freezer units were noted at -18C or below.
- Food observed stored protected and in the proper storage hierarchy.
- Sanitizer container detected with 200 PPM chlorine residual.
- High temperature dish machine was able to reach 71.4C at the plate level during the rinse cycle.
- General cleanliness acceptable.
- Operator's FOODSAFE level 1 certificate expires in September 2023 - please renew before the expiry date.
