Observation (CORRECTED DURING INSPECTION): Wash gauge reading 143 degrees F. Rinse gauge reading 191 degrees F. However the final rinse temperature at the plate level observed to be 66 degrees C.
Corrective Action(s): All cups and spoons used for tasting to be washed, rinsed, then sanitized in 100ppm bleach for 2 minutes then air dryed until dishwasher is serviced.

Corrective Action(s): Service the high temperature dishwasher and ensure the rinse gauge reads at or above 180 degrees F and the final rinse temperature at the plate level is at or above 71 degrees C. Correct immediately.

Warehouse: coffee bean storage, roasting, grinding, additional of flavours, then packaging.
2 compartment sink available for use in back area. Liquid soap and paper towels provided.
Bleach available for use. Ultra San (sodium hypochlorite) available for use.
Clean in place for equipment using compressed air. Reminder to sanitizer food equipment and food contact surfaces.
Pest control services in place.
All food products and packaging material stored off the floor.
