Inspections conducted for the 7 serving kitchens located in each of the 7 cottages in the building.
Each "cottage" kitchen is equipped with a high temperature dishwasher, a domestic upright cooler/freezer unit, and a 2 compartment ware washing sink. The kitchens with an asterisk ( * ) beside them have an additional upright cooler (or cooler/freezer combination). Food prep is limited at each of these kitchens, as food is mostly prepared from the main kitchen and then brought to each cottage kitchen to be served/dispensed.
All upright coolers in each of the kitchens were at 4 deg C or less
All upright freezers in each of the kitchens were at -18 deg C or less
Temperature logs for all cold holding units maintained daily and up to date
Dishwasher sanitizing temperatures were recorded for each kitchen (recorded inside dishwasher after rinse cycle, at the dish level):
1) Sunflower : 74 deg C
2) Lavender Way: 71.3 deg C
3) Poppy Place: 78.1 deg C
*4) Pansy Lane: 71.9 deg C
*5) Sweet Pea: 75.1 deg C
*6) Rose Garden: 75.3 deg C
7) Mike and Nancy's Garden Room: 78.6 deg C
Wash and rinse temperatures are recorded daily in logs available at each cottage kitchen.
General sanitation in each of the kitchens is excellent
No signs of pests in the kitchens, foods are stored off the floor and covered in the cooler/freezer
Each kitchen has a quat spray sanitizer bottle at 200 ppm concentration for sanitizing of food contact surfaces underneath the 2 compartment sinks
