Observation (CORRECTED DURING INSPECTION): 2 issues:
=commonly used food contact surfaces are sanitized at the end of the day. This includes large mixers and counter tops.
=Staff are unaware of proper manual warewashing procedures. Some staff do not sanitize dishware.
Corrective Action(s):
=commonly used food contact surfaces must be sanitized minimum once every 4 hours. After using equipment such as mixers and presses, ensure that they are immediately washed, rinsed, then sanitized according to clean in place procedures provided by head office.
=Discussed proper 3 compartment warewashing method with staff.
Follow posted diagram and always ensure that dishware is washed, rinsed, then sanitized and allowed to air dry. Do not rinse after sanitizing.

Observation: Sanitizer dispenser not installed at 3 compartment sink. Operator has switched chemical supply company; only older sanitizer concentrate available for sanitizing.

Corrective Action(s): Install a sanitizer dispenser or provide method to supply 3 compartment sink with sanitizer.

Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: staff do not wash hands using soap or paper towels. Staff observed using dirty apron to dry hands.
Corrective Action(s): always wash hands using liquid soap, paper towels, and warm water. Do not use aprons for drying hands.

Observation: Fruit fly activity noted in mop sink and 3 compartment sink area.
Pest control reports indicated persistent fruit fly activity
Corrective Action(s): Install fly strips in the mop sink area. Clean around the grease trap and underneath the 3 compartment sink to reduce moisture and soil build up that can contribute to fruit fly infestation.
