Observation: Dishwasher was not in use and broken for the last 4 months.
Facility has plans to install 3 compartment sink to expand the 2 compartment sink.
More racks are needed for dish drying and storage as items (unclear if dirty or clean) are being stored or stacked together.
Facility using 2 compartment sink for washing, then sanitizing and then the wash sink is being used to store clean dishes. Rinsing and dumping in the sanitizing sink.
Area for dishwashing is too small.

Manager said the 3 comp sink has already been ordered and broken dishwasher will be removed, thank you.
Corrective Action(s): Provide plans for 3-compartment sink install or fix dishwasher.
Ensure that new sink ordered can fully submerge largest piece of equipment for sanitizing.
Install more racks for dish drying.
Clean and sanitize sanitizing sink before using this for submerging dishes.

Comments

Hand wash sink supplied with hot and cold running water, liquid soap in dispenser and paper towel in dispenser.
Receiving was occurring and trays and loads had to be moved out of the way of the hand sink at the time of inspection.
There is compact space in the Bakery/Deli. Bakery and Deli items are stored together.
Shelves are organized and labelled, great job. Difficult for carts, bread boxes and other items to get through.
Congestion with staff serving customers, loading and other food prep activities going on at the same time.
Fridges <4C.
Freezers <-18C.
Sanitizer 200ppm Quat solution.
Please ensure slicers are being cleaned and sanitized at least every 2hrs.
No signs of pests at time of inspection.
